Once upon a time these rooms housed the courtyard animals, today however they house the bottle refinement stage where bottled wines complete their aging process. 

A fundamental characteristic of this part of the complex is the perfect climatic conditions guaranteed by the thick stone walls which allow shelter from the summer heat and the rigours of winter.
