WINES: AGEING IN WOOD

 

After fermentation, the wines are passed into one of three types of wooden containers for refinement:  barrique, tonneaux or Slavonian oak barrels.

These three types are stored in 3 different locations. Some of the barriques and tonneaux are stored in the cellar of the villa with the classical arched ceiling structure made of tuffaceous stone and local rock.
Other barriques are kept in the cellars of the outhouses which benefit from excellent thermal isolation due to the heavy stone walls.

These rooms, which are at the heart of the wine-making and conservation processes, have added charm from the wall markings which show old openings and walkways which have long been walled up.

The barrels however are located in an area in the basement below the vat rooms and are linked to the vat rooms by a beautiful stone stairway.
