After having decanted the wines into barriques, tonneaux and oak casks, it is really important to check that these barrels are perfectly filled up.

After the wine decanting, infact, the barrels can settle a bit and find themselves not completely full even if they have been just filled.

If the level of the wine inside the barrel goes down, the oxigen that enters can compromise the quality of the wine. A well timed filling process avoids then this problem.

During the ageing period, the wines ageing in wood are filled once a week.

In July the wines are also analysed in our laboratory in order to control the analytical values and to decide the necessity of corrections or integrations.

The analysis includes the total and volatile acidity, free and total sulphur dioxide, the ph and the sugars: these analysis will be then repeated before winter and at the beginning of spring.
